It is not frequently used in baked items because it is not heat stable and loses sweetness when heated.  With more than 100 studies confirming its safety, Aspartame is one of the ingredients in the human food supply that has undergone the most extensive research. Scientists from the FDA have examined the available research on the safety of aspartame in food and come to the conclusion that, under specific circumstances, it is safe for the general public. Aspartame contains the amino acid phenylalanine, but individuals with the rare hereditary condition phenylketonuria (PKU) have trouble metabolising it. As a result, they should limit their consumption of phenylalanine from all sources, including aspartame. Food and drink products containing aspartame must have a warning on the label informing those who have PKU that the product contains phenylalanine.
