Ales and Lagers are the two varieties of Beer. These two varieties differ when they ferment because they use various yeasts and ferment at various temperatures.
Ales- Ales are brewed using yeasts that, at temperatures near to room temperature, convert carbohydrates into alcohol and carbon dioxide. Ales are usually referred to as top-fermented beers because the yeast floats on the surface throughout the fermentation process.

Lagers- Lagers are beers made using yeast that, when temperatures are dropped, settles to the bottom of the fermentation vessel. Because the yeasts in lagers sit at the bottom of the liquid while they work, lagers are occasionally referred to as bottom-fermented beers.
